Kippered Salmon Quiche with Candy
- 1 Frozen Pie Pastry Sheet
- 2 Cups Shredded Smoked Kippered Salmon
- 1 Stick Chopped Smoked Salmon Candy
- 3 Pieces Crumbled Bacon
- 1 Cup Shredded Mozzarella or Gruyere Cheese Plus ½ Cup More for Final Garnish
- 3 Scallions
- 4 Eggs
- 1 Cup Heavy Cream
- A Few Grinds Of Freshly Ground Pepper
Heat oven to 425 degrees. Prepare pastry. Sprinkle salmon, salmon candy, bacon, 1 cup of cheese and scallions in pastry lined dish. Slightly beat eggs and add cream and pepper. Pour over
ingredients in dish. Bake uncovered for 15 minutes then reduce oven temp to 325 degrees and bake about 25-30 minutes longer. A knife should come clean when inserted in center. Let stand a few minutes
before serving. Garnish edge with remaining cheese.
